Ok, this is one of the most ghetto recipes ever, but it's also one of the tastiest.
Ingredients
1 pkg Cream Cheese
1 loaf white bread
Mixture of cinnamon/sugar
1 stick butter
Cut crusts off of bread and roll flat with rolling pin. Layer each piece of flattened bread with a generous helping of cream cheese. Gently dip other side of bread in melted butter and then in Cinnamon/sugar mixture. Roll into small roll with cream cheese on inside. Bake at 350 until slightly browned and maybe a little crunchy. (depending on your preference)

Chicken & Rice Casserolle
Made this the other day and it was FANTASTIC! Thought I would share!
Ingredients:
1 1/2 cup rice
1 10oz can of Cream of Chicken
1 10oz can of Cream of Mushroom
4-6 Chicken Breast/Tenders
1 pkg of Lipton Onion Soup/Dip Mix
1 pkg of shredded cheese
Sliced Mushrooms / Jalapenos / Onions (optional)
Steps:
- Pour the rice in a 9x13 inch glass backing pan
- in a separate bowl mix the two cans of cream with two cans of water
- Pour over the rice and lightly mix together
- Lay the pieces of chicken in the mixture
- Sprinkle the Lipton mix on top of everything
- add any other optional veggies on top
- cover with aluminum foil
- bake at 350 degrees for 70 min
- remove aluminum foil and layer top of casserole with cheese
- bake un-covered for another 30 min
(may take a little longer depending on your oven - just make sure rice/chicken is done)
Let stand for 5-10 minutes

Chicken Spaghetti
Got this from our Relief Society President when I asked her to do a presenation for the YW.
Chicken Spaghetti
This past week, the young women's president (That was me) asked if I would do a cooking demonstration for the girl. I was thrilled! I decided on this recipe because there are different cooking techniques, basic techniques, that were involved. It is also a recipe that was one of my favorites growing up:
1 Rotisserie Chicken
1 1/2 lb. spaghetti
1-2 Tablespoons butter
1/2 small onion ( or use the whole onion if you love onion like me :))
1 green bell pepper
1 cup mushrooms (or more if you like mushrooms like me)
1 can cream of mushroom
1 can cream of chicken
1 can cream of celery
3/4 block of Velveeta cheese
-Boil your pasta as directed on the package, in a large
-In the mean time, de-done your chicken into bite sized pieces, dice, roughly chop up, or however you like to do it, your vegetables, and cube your Velveeta.
-Drain your pasta and rinse with cold water to ensure it does not stick spaghetti. Return to stock pot and set aside.
-In a large frying pan or skillet, melt your butter over medium high and toss in your onion, mushroom and bell pepper. Saute until softened and opaque. Your kitchen will smell wonderful!
-Add in your soups, and Velveeta cheese. Stir constantly until all melded together. Add in your chicken, stir.
-Pour the soup/sauce mixture over your noodle in the stock pot. Grab some tongs and mix it all up until it is all blended.
-Serve with some fresh french bread and enjoy! It is so YUMMY! (Yes it was!)

Meat Loaf
1 lb. Ground beef
1/2 cup ketchup (or more if mixture doesn't seem moist enough)
1 egg
1 packaging saltine crackers (crushed as fine as you can get it)
steak or BBQ sauce (optional)
pepper (just spinkle a little on)
Mash with hands until well mixed. Shape into loaf pan. Bake at 350 for approx. 1 hour.
*** Keep an eye on top of meat loaf. If it starts to harden or dry prematurely cover with tin foil.

Lasagna
Preheat oven to 350
16 oz. whole milk ricotta cheese (mixed with 1 egg and 1/2 tsp. nutmeg)
mozerella cheese
parmesan
1 large jar/can spaghetti sauce
9-12 pre cooked lasagna noodles
thinly sliced smoked ham
Layer ingredients in order listed above. Repeat until reaches desired size for your family/guests.
Top with Mozerlla/parmesan and bake 30-45 minutes.

Royal Icing
(This icing is will stiffen. It works well for decorating sugar cookies, or constructing ginger bread houses!)
3 tbsp. Meringue Powder
1 lb. (4 cups) sifted confectioners sugar
6 tbsp. warm water
Beat all ingredients together until icing forms peaks.
***For even stiffer icing, add less water.

Murder Inc. Cake (courtesy Carrie Olson)
(***Warning: Very Decadent!)
5 tbsp. cocoa Frosting
1 cup water 1/2 cup margarine
2 sticks margarine 3 tbsp. milk
2 cups flour 2 tbsp. (heaping) cocoa
2 cups sugar 1/2 lb. powdered sugar
1 tsp. baking soda 1 tsp. vanilla
1 cup buttermilk
1 tsp. vanilla
2 eggs
Put sugar and flour in a bowl. Set aside. In a saucepan heat cocoa, water and margarine till melted. Pour over remaining dry ingredients. Mix thorougly and add to sugar/flour. Beat together. Batter will be thin. Pour into greased (not oiled) and floured 9 x 13. Bake at 350 for 25-30 minutes. Frost after cooling 10 minutes. Otherwise cake will fall.
